Résumé

Pour de nombreux auteurs, les dysfonctions masticatoires peuvent entraîner une réduction des ingestats de plusieurs nutriments essentiels avec comme conséquence possible une malnutrition par carence. Le but de ce travail est d’étudier l’association entre la performance masticatrice et l’état nutritionnel chez des sujets porteurs de prothèses complètes.
Méthode : La performance masticatoire a été évaluée par une méthode granulométrique sur une population de 74 sujets répartis en 2 groupes selon leur état dentaire. Le mini nutritional assessment a été utilisé pour l’évaluation de la nutrition.
Résultats : Les résultats montrent une association entre le port de prothèses complètes et un mauvais état nutritionnel. Le risque de malnutrition évalué par le MNA est trouvé chez 80% des sujets édentés porteurs de prothèses et chez seulement 26 % des contrôles normodentés de même âge. La différence entre les 2 groupes au regard de ce paramètre est significative (p < 0,0001). Il existe une corrélation positive et significative entre la performance masticatoire évaluée par la médiane de la taille des particules et l’état nutritionnel.
Conclusion : Aucun des sujets inclus dans cette étude n’est réellement en état de malnutrition selon le MNA, toutefois une majorité des sujets porteurs de prothèses complètes sont en risque de malnutrition.

Abstract
Relationships between masticatory performance and nutritional state in complete denture wearers

For many authors masticatory dysfunctions are related to reduction in dietary intake with malnutrition as a possible consequence. The aim of the present study was to further investigate the relationships between masticatory performance and nutritional state in complete denture wearers.
Method: Masticatory performance was assessed using a granulometric method in 74 subjects divided into 2 subgroups according to their dental status (normal dentition and complete dental wearers). Nutritional status of study subjects was analyzed with Mini Nutritional Assessment (MNA).
Results: There were a significant association between wearing denture and Nutritional Status as assessed by MNA. Using this scale, a risk of malnutrition was found in 80% of subjects wearing complete denture and in 26% in the normal dentition sub group (p < 0.0001). There were also a positive and significant correlation between, the particle size distribution and masticated test food and nutritional status.
Conclusion: Complete denture wearers are at greater risk of malnutrition than did subjects with normal dentition.
